Crispy Mongolian lamb stir fry recipe

How about trying an authentic Oriental dish such as crispy Mongolian lamb stir fry. A cheaper and tasty alternative to duck wraps which are great for the whole family. First start off by choosing the best meat for any dish, meat which is firm, slightly pink with a velvet texture.

Ingredients needed to serve two generously

  • 1 breast or shoulder of lamb (about 750 grams)
  • A thumb sized piece of ginger
  • 2 crushed garlic cloves
  • 6 tbsp of dark soy sauce
  • 1 tbsp of Chinese five spice powder
  • 150ml of Shaohsing rice wine
  • 2 tbsp of soft light brown sugar
  • Lettuce, cucumber & Spring onion for serving

Cooking & preparing the lamb

Heat the oven to 180C/160C fan/gas 4. Put the lamb in a casserole dish with a lid. Add the remaining ingredients plus enough water to just cover them. Cook with the lid on for 3 hrs until the meat is tender and the bones pull out easily. Allow to cool still covered in the cooking liquid with the lid on. You can do this a day or so in advance and let the lamb cool completely in the fridge.

I love make it in advance – it just makes life easier with work, children and home life to balance’ Easier said than done I know but you’ve just got to be a bit organised and stock your cupboard with ingredients not junk food and fortunately I also know an amazing butcher!

When cold, lift the lamb out of the liquid and transfer to a baking tray. Skim fat from the sauce.

Reserve half the sauce for the noodles and bubble the rest, still in the pan, until thick and syrupy. Pour into a small serving bowl. Heat grill to medium and grill lamb until crisp and hot through, but not too dark.

Shred the lamb, discarding most of the fat and all the bones, but keep the nice, crisp skin. You can cut the skin off first and leave it in a hot oven while you shred the rest of the meat. To serve, take everything to the table and eat the lamb rolled up in the lettuce leaves with the cucumber, spring onions and sauce, plus the noodles on the side.

Preparing the stir-fried noodles

For the stir-fried noodles cook 2 blocks of medium egg noodles and then drain the noodles. Heat 1 tbsp sunflower oil in a wok or frying pan and throw in a handful bean sprouts and 1 sliced red chilli. Cook for 1 min then add a ladleful of the reserved cooking liquid from the lamb. Add the noodles to the pan with 2 sliced spring onions, tossing well to combine. Stir-fry for 1-2 mins on a high heat until all the noodles are coated in the sauce.

Then you are ready to seat down and eat. Now that wasn’t hard was it even for the culinary challenged home cook just trying their best!

This has a relatively quick prep time if you have cooked your lamb ahead maybe even in the slow cooker but these recipes never include the time to weigh out ingredients and also the time afterwards washing up!
